A colorful and hearty pasta salad featuring sweet corn, colorful peppers, and a zesty dressing, perfect for gatherings or family dinners.
Ingredients
- 12 ounces pasta (penne or fusilli)
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- ½ red onion, finely chopped
- 1 teaspoon chili powder
- 3 tablespoons olive oil
- Juice of 1 lime
- Handful of cilantro, chopped
- Salt and pepper, to taste
Instructions
- Begin by cooking your pasta according to the package directions until it’s al dente. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooled pasta with the corn, diced peppers, and onions.
- In a smaller bowl, whisk together olive oil, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta mixture, tossing gently to combine.
- Fold in the chopped cilantro, tasting and adjusting seasonings as needed.
- Chill for at least 30 minutes before serving to allow the flavors to meld beautifully.
Notes
For best flavor, use fresh corn that can be grilled or charred. This dish is great as a side or standalone meal.
