Description

A delightful slow-cooked dish combining sweet pineapple and savory soy sauce, perfect for weeknight dinners or gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 can (8 oz) crushed pineapple in juice, undrained
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Optional: sliced green onions and sesame seeds for garnish


Instructions

  1. Place the chicken breasts at the bottom of your slow cooker.
  2. In a small mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, crushed pineapple, minced garlic, ground ginger, salt, and pepper.
  3. Pour the mixture over the chicken, ensuring every piece is well coated.
  4. Cover the slow cooker and set it to low for 6 to 7 hours or high for 3 to 4 hours until the chicken is tender.
  5. Once cooked, remove the chicken and set it aside on a plate.
  6. In another bowl, combine cornstarch and water to create a slurry.
  7. Pour the slurry back into the slow cooker and stir well to thicken the sauce.
  8. Return the chicken to the crockpot and let it simmer for an extra 10-15 minutes.
  9. Shred the chicken with two forks or serve it whole.
  10. Plate the Sweet Hawaiian Crockpot Chicken over rice or noodles, and garnish with green onions and sesame seeds if desired.

Notes

For a vegetarian twist, substitute chicken with firm tofu. You can also add a splash of rice vinegar or red pepper flakes for an extra zing.
