Description

A delightful twist on the classic Caesar, combining pasta, kale, and Caesar dressing for a vibrant and nutrient-packed salad.

Ingredients

  • 8 oz pasta (cavatappi or fusilli works well)
  • 4 cups chopped kale (stems removed)
  • 1/2 cup Caesar dressing (homemade or store-bought)
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • 1/4 cup croutons
  • Fresh lemon juice (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Begin by cooking the pasta according to the package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process.
  2. While the pasta is cooking, prepare the kale by washing and chopping it into bite-sized pieces. Massage the kale with a pinch of salt to help break it down and enhance its flavor.
  3. In a large mixing bowl, combine the cooled pasta, kale, Caesar dressing, and grated Parmesan cheese. Toss everything together until evenly coated.
  4. Adjust seasoning with lemon juice, salt, and pepper to your liking.
  5. Top with croutons for added crunch and serve immediately or let it chill in the fridge for about 30 minutes for the flavors to meld.

Notes

For a lower-carb option, consider using spiralized zucchini or cauliflower. To make it dairy-free, nutritional yeast can be a fantastic substitute for Parmesan.
