Ingredients
- 8 oz pasta (cavatappi or fusilli works well)
- 4 cups chopped kale (stems removed)
- 1/2 cup Caesar dressing (homemade or store-bought)
- 1/4 cup grated Parmesan cheese (plus more for serving)
- 1/4 cup croutons
- Fresh lemon juice (to taste)
- Salt and pepper (to taste)
Instructions
- Begin by cooking the pasta according to the package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process.
- While the pasta is cooking, prepare the kale by washing and chopping it into bite-sized pieces. Massage the kale with a pinch of salt to help break it down and enhance its flavor.
- In a large mixing bowl, combine the cooled pasta, kale, Caesar dressing, and grated Parmesan cheese. Toss everything together until evenly coated.
- Adjust seasoning with lemon juice, salt, and pepper to your liking.
- Top with croutons for added crunch and serve immediately or let it chill in the fridge for about 30 minutes for the flavors to meld.

For a lower-carb option, consider using spiralized zucchini or cauliflower. To make it dairy-free, nutritional yeast can be a fantastic substitute for Parmesan.
