Ingredients
- 1 pound ground beef
- 1 cup diced onion
- 1 cup diced bell peppers (any color)
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz), drained
- 2 cups shredded cheese (cheddar or your choice)
- 2 eggs
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add diced onion, bell peppers, and garlic; sauté until softened.
- Stir in the drained tomatoes, Italian seasoning, salt, and pepper. Mix well.
- In a bowl, whisk together eggs and half the cheese; add this mixture to the beef mixture and stir to combine.
- Pour the mixture into a greased baking dish and top with the remaining cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
Notes
Leftovers can be stored in the refrigerator for up to three days. Reheat in the oven or microwave.
