Description

A hearty casserole combining seasoned ground beef, gooey cheese, and vibrant vegetables, perfect for a low-carb lifestyle.


Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 cup diced bell peppers (any color)
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz), drained
  • 2 cups shredded cheese (cheddar or your choice)
  • 2 eggs
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add diced onion, bell peppers, and garlic; sauté until softened.
  4. Stir in the drained tomatoes, Italian seasoning, salt, and pepper. Mix well.
  5. In a bowl, whisk together eggs and half the cheese; add this mixture to the beef mixture and stir to combine.
  6. Pour the mixture into a greased baking dish and top with the remaining cheese.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.

Notes

Leftovers can be stored in the refrigerator for up to three days. Reheat in the oven or microwave.
