Description

Juicy, marinated chicken grilled to perfection with zesty citrus and aromatic herbs, perfect for summer barbecues.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 limes (about 1/4 cup)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped (or 1 tablespoon dried cilantro)
  • 2 tablespoons honey
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Whisk together olive oil, lime juice, minced garlic, cilantro, honey, cumin, salt, and pepper until well combined.
  2. Place the chicken breasts in a large resealable bag or shallow dish and pour the marinade over them. Seal or cover, ensuring all the chicken is coated.
  3. Marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade, letting excess drip off, and discard the marinade.
  6. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and juices run clear.
  7. Allow the chicken to rest for a few minutes before slicing to retain the juices.

Notes

For extra juiciness, consider using bone-in chicken thighs. Make sure your grill is well-preheated for the best results.
