Description
Juicy, marinated chicken grilled to perfection with zesty citrus and aromatic herbs, perfect for summer barbecues.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 2 limes (about 1/4 cup)
- 4 cloves garlic, minced
- 2 tablespoons fresh cilantro, chopped (or 1 tablespoon dried cilantro)
- 2 tablespoons honey
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Whisk together olive oil, lime juice, minced garlic, cilantro, honey, cumin, salt, and pepper until well combined.
- Place the chicken breasts in a large resealable bag or shallow dish and pour the marinade over them. Seal or cover, ensuring all the chicken is coated.
- Marinate in the refrigerator for at least 30 minutes, or up to overnight for deeper flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, letting excess drip off, and discard the marinade.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and juices run clear.
- Allow the chicken to rest for a few minutes before slicing to retain the juices.
Notes
For extra juiciness, consider using bone-in chicken thighs. Make sure your grill is well-preheated for the best results.
