Ingredients
- 2 pounds beef (chuck roast or flank steak)
- 1 cup soy sauce (low sodium recommended)
- 1/2 cup brown sugar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup beef broth
- 1/4 cup rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch (for thickening, optional)
- 1 cup sliced bell peppers
- 1 cup sliced onions
- 1/2 cup sliced green onions (for garnish)
- Cooked rice or noodles (for serving)
Instructions
- Prep the beef: Cut the beef into bite-sized pieces and season lightly with salt and pepper.
- Sear the beef: In a skillet over medium-high heat, sear the beef pieces until browned on all sides (optional).
- Arrange in the crock pot: Place the beef pieces in the crock pot and add bell peppers and onions on top.
- Mix the sauce: In a bowl, combine soy sauce, brown sugar, garlic, ginger, beef broth, rice vinegar, and sesame oil. Pour this mixture over the beef and vegetables.
- Cook: Cover and cook on low for 6-8 hours or high for 4 hours, until the beef is tender.
- Thicken (optional): If you prefer a thicker sauce, mix cornstarch with water and stir it in 30 minutes before serving.
- Serve: Garnish with sliced green onions and serve over rice or noodles.
