Ingredients
- 3-4 pounds beef roast
- 1 cup soy sauce
- 1/2 cup brown sugar (or coconut sugar)
- 1/4 cup rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 2 cups beef broth
- 1 onion, chopped
- 3 carrots, chopped
- 3 potatoes, chopped
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine soy sauce, brown sugar, rice vinegar, garlic, ginger, and sesame oil. Stir until well blended.
- Season the beef roast generously with salt and pepper, then sear it in a pan over medium heat until browned on all sides.
- Transfer the beef to a sturdy roasting pan.
- Surround the roast with chopped onions, carrots, and potatoes.
- Pour the soy sauce mixture and beef broth over the meat and veggies.
- Cover the pan tightly and roast in the oven for 3-4 hours, or until the beef is fork-tender.
- Allow the roast to rest for 15 minutes before slicing and serving.
Notes
For extra appeal, slice the beef against the grain and pair with steamed rice or mashed potatoes. Storing leftovers is easy; refrigerate for up to 3 days or freeze for 3 months.
