Description

A comforting pot roast infused with bold Korean flavors, creating a tender and savory meal perfect for family dinners.

Ingredients

  • 3-4 lbs beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, chopped
  • 1 cup mushrooms, sliced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and ginger. Mix well until the sugar dissolves.
  2. Place the beef chuck roast into a slow cooker, and pour the soy sauce mixture over it, ensuring the roast is well-coated.
  3. Add the beef broth, chopped onion, sliced carrots, potatoes, and mushrooms. Give everything a gentle stir.
  4. Season generously with salt and pepper to enhance the flavors.
  5. Cover and cook on low for 8 hours, or until the meat is fork-tender and flavorful.
  6. Serve hot, garnished with chopped green onions for a pop of color and freshness.

Notes

For a deeper flavor, consider searing the chuck roast in a hot skillet before placing it in the slow cooker.
