Ingredients
- 8 ounces pasta (any shape)
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil leaves, chopped
- ½ cup grated Parmesan cheese
- ½ cup extra virgin olive oil
- Juice and zest of 1 lemon
- Salt to taste
- Pepper to taste
- Optional: pine nuts or walnuts for added crunch
Instructions
- Begin by cooking the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
- Add the cooked pasta, cherry tomatoes, and fresh basil to the bowl, and toss until well combined.
- Gently fold in the Parmesan cheese, allowing it to mix through the salad.
- Taste and adjust seasoning as needed, tossing in some pine nuts or walnuts if desired.
- Serve immediately or refrigerate for at least 30 minutes for the flavors to meld.
Notes
