Description

A refreshing pasta salad featuring fresh lemon zest, aromatic basil, and grated Parmesan cheese. Perfect for picnics, potlucks, or a light dinner.


Ingredients

  • 8 ounces pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • ½ cup grated Parmesan cheese
  • ½ cup extra virgin olive oil
  • Juice and zest of 1 lemon
  • Salt to taste
  • Pepper to taste
  • Optional: pine nuts or walnuts for added crunch


Instructions

  1. Begin by cooking the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
  3. Add the cooked pasta, cherry tomatoes, and fresh basil to the bowl, and toss until well combined.
  4. Gently fold in the Parmesan cheese, allowing it to mix through the salad.
  5. Taste and adjust seasoning as needed, tossing in some pine nuts or walnuts if desired.
  6. Serve immediately or refrigerate for at least 30 minutes for the flavors to meld.

Notes

For a gluten-free option, substitute the pasta with a gluten-free variety. Enhance flavors by preparing ahead of time.
