Description

Ingredients

  • 4 chicken breasts
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup olive oil
  • 3 cloves garlic (minced)
  • 1/4 cup fresh herbs (like parsley and thyme)
  • 1/2 cup grated Romano cheese
  • 1 cup breadcrumbs
  • Salt and pepper to taste


Instructions

  1. Marinate the chicken in a mixture of lemon juice, olive oil, minced garlic, and herbs for about 30 minutes.
  2. In a separate bowl, combine breadcrumbs, grated Romano cheese, salt, and pepper.
  3. Remove the chicken from marinade; let excess liquid drip off.
  4. Coat each piece in the breadcrumb mixture, pressing gently to adhere.
  5. Heat olive oil in a skillet over medium heat; add the chicken.
  6. Sear for about 5-7 minutes on each side or until golden brown and cooked through.
  7. Serve with additional lemon wedges for garnish.

Notes
