Description

A delightful lemon meringue pie with a tangy filling and fluffy meringue topping, perfect for gatherings.


Ingredients

  • 1 pre-baked pie crust
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 3 large egg yolks
  • 1/2 cup freshly squeezed lemon juice
  • Zest from 2 lemons
  • 2 tablespoons unsalted butter
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, mix granulated sugar, cornstarch, and water over medium heat. Stir until thickened.
  3. Gradually whisk in egg yolks, lemon juice, and lemon zest. Cook for 2 more minutes, then remove from heat and stir in butter.
  4. Pour the filling into the prepared pie crust.
  5. In a clean bowl, beat egg whites and cream of tartar until stiff peaks form. Gradually add sugar, continuing to beat until glossy.
  6. Spread the meringue over the lemon filling, sealing the edges.
  7. Bake for 10-15 minutes until lightly browned. Cool before serving.

For best results, use fresh lemon juice and ensure your mixing bowl is clean when beating egg whites.
