Ingredients
- 1 pre-baked pie crust
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 cup water
- 3 large egg yolks
- 1/2 cup freshly squeezed lemon juice
- Zest from 2 lemons
- 2 tablespoons unsalted butter
- 3 large egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, mix granulated sugar, cornstarch, and water over medium heat. Stir until thickened.
- Gradually whisk in egg yolks, lemon juice, and lemon zest. Cook for 2 more minutes, then remove from heat and stir in butter.
- Pour the filling into the prepared pie crust.
- In a clean bowl, beat egg whites and cream of tartar until stiff peaks form. Gradually add sugar, continuing to beat until glossy.
- Spread the meringue over the lemon filling, sealing the edges.
- Bake for 10-15 minutes until lightly browned. Cool before serving.
