Description

A delightful salmon salad combining rich flavors with fresh vegetables, perfect for lunch or dinner.


Ingredients

  • Cooked salmon (leftover or canned)
  • 1 small red onion, chopped
  • 2 stalks of celery, diced
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Mixed greens (optional)


Instructions

  1. Flake the cooked salmon into small pieces in a large mixing bowl.
  2. Add the chopped red onion and diced celery to the bowl.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until well combined.
  4. Pour the dressing over the salmon mixture and gently stir until everything is well incorporated.
  5. Serve the salad atop a bed of mixed greens, or enjoy it nestled in a low-carb sandwich.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. Experiment with different mustards for a unique twist.
