A delightful salmon salad combining rich flavors with fresh vegetables, perfect for lunch or dinner.
Ingredients
- Cooked salmon (leftover or canned)
- 1 small red onion, chopped
- 2 stalks of celery, diced
- ¼ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Mixed greens (optional)
Instructions
- Flake the cooked salmon into small pieces in a large mixing bowl.
- Add the chopped red onion and diced celery to the bowl.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until well combined.
- Pour the dressing over the salmon mixture and gently stir until everything is well incorporated.
- Serve the salad atop a bed of mixed greens, or enjoy it nestled in a low-carb sandwich.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. Experiment with different mustards for a unique twist.
