Ingredients
- 1.5 lbs chicken breasts or thighs
- 1/4 cup fresh lime juice (about 3-4 limes)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro for garnish (optional)
Instructions
- Combine the lime juice, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper in a mixing bowl.
- Add the chicken to the marinade, ensuring each piece is well-coated. Let it marinate for at least 30 minutes.
- Preheat your grill or oven to a medium-high heat.
- If grilling, place the marinated chicken directly on the grill. Cook for about 6-7 minutes per side or until the internal temperature reaches 165°F.
- For baking, place the chicken on a lined baking sheet. Bake for 20-25 minutes or until cooked through.
- Allow the chicken to rest for 5 minutes before slicing. Serve garnished with fresh cilantro, if desired.
