Ingredients
- 4 large baked potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked bacon, crumbled
- 1 cup sour cream
- 1/4 cup chopped chives
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the diced baked potatoes and broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
- For a creamier texture, mash some of the potatoes directly in the slow cooker.
- Stir in shredded cheese, crumbled bacon, and sour cream.
- Season to taste with salt and pepper.
- Before serving, top with freshly chopped chives.
