Description

A creamy and comforting Loaded Baked Potato Soup that combines baked potatoes, crispy bacon, and cheese for a hearty meal.


Ingredients

  • 4 large baked potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked bacon, crumbled
  • 1 cup sour cream
  • 1/4 cup chopped chives
  • Salt and pepper to taste


Instructions

  1. In a slow cooker, combine the diced baked potatoes and broth.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
  3. For a creamier texture, mash some of the potatoes directly in the slow cooker.
