Description

A creamy, comforting Loaded Baked Potato Soup that combines all the beloved toppings of a baked potato into a delicious soup perfect for chilly nights.


Ingredients

  • 4 large potatoes, peeled and diced
  • 6 slices of bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup green onions, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste


Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove the bacon and set it aside, keeping the drippings in the pot.
  2. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until potatoes are tender (15-20 minutes).
  3. Mash the potatoes slightly for a creamier texture.
  4. Stir in the heavy cream, cheddar cheese, and sour cream until well combined.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with crispy bacon bits and chopped green onions.

Notes

For a healthier version, substitute Greek yogurt for sour cream and use turkey bacon. For more flavor, add minced garlic when cooking the bacon.
