Ingredients
- 4 large potatoes, peeled and diced
- 6 slices of bacon, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup green onions, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove the bacon and set it aside, keeping the drippings in the pot.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until potatoes are tender (15-20 minutes).
- Mash the potatoes slightly for a creamier texture.
- Stir in the heavy cream, cheddar cheese, and sour cream until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with crispy bacon bits and chopped green onions.
Notes
For a healthier version, substitute Greek yogurt for sour cream and use turkey bacon. For more flavor, add minced garlic when cooking the bacon.
