A rich, creamy loaded potato soup filled with tender potatoes, melty cheddar, crispy bacon, and fresh chives. This comforting soup brings all the flavors of a loaded baked potato into one cozy bowl.
Ingredients
- 2 lbs Russet potatoes, peeled and cubed
- 1 cup chopped yellow onion
- 1/2 cup chopped celery
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 cups milk
- 1 cup heavy cream
- 8 slices bacon, cooked and crumbled
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh chives
- 4 tbsp butter
- 4 tbsp all-purpose flour
- Salt and black pepper, to taste
Instructions
- Melt butter in a large pot over medium heat. Add onion and celery; cook 5–7 minutes.
- Stir in garlic and cook 1 minute.
- Add flour; cook 1–2 minutes, stirring constantly.
- Slowly whisk in chicken broth until smooth.
- Add potatoes. Bring to a boil, then reduce heat and simmer 15–20 minutes until tender.
- Blend with an immersion blender until creamy, leaving some potato pieces.
- Stir in milk and heavy cream; warm gently without boiling.
- Add 1.5 cups cheddar cheese and stir until melted.
- Season with salt and pepper.
- Serve topped with bacon, remaining cheese, and chives.

- For a thicker soup, reduce the broth slightly or simmer uncovered.
- Add toppings like sour cream, green onions, or cayenne for more flavor.
