Ingredients
- 6 slices of bacon
- 4 tablespoons unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 4 cups russet potatoes, peeled and diced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- 2 green onions, thinly sliced for garnish
- Additional cheddar cheese and chopped bacon for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and drain on a paper towel before crumbling into small pieces.
- Pour out most of the bacon fat, leaving about 1 tablespoon in the pot for flavor.
- Melt the butter over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
- Sprinkle the flour over the onion mixture and cook, stirring constantly, for 1-2 minutes until lightly browned.
- Gradually whisk in the chicken broth until smooth. Bring to a boil.
- Add the diced potatoes, reduce the heat to low, cover, and simmer for 15-20 minutes or until the potatoes are tender.
- Lightly mash the potatoes with a potato masher to your desired consistency.
- Stir in the heavy cream, shredded cheddar cheese, sour cream, salt, and pepper. Cook until the cheese melts and everything is heated through.
- Serve the soup hot, garnished with crumbled bacon, sliced green onions, and any additional toppings you like.

For extra creaminess, consider using Yukon Gold potatoes. Adding a touch of smoked paprika can elevate the flavor profile.
