Description

A hearty blend of creamy potatoes, smoky bacon, and vibrant toppings, perfect for cozy family dinners.


Ingredients

  • 6 slices of bacon
  • 4 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 4 cups russet potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 2 green onions, thinly sliced for garnish
  • Additional cheddar cheese and chopped bacon for garnish


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and drain on a paper towel before crumbling into small pieces.
  2. Pour out most of the bacon fat, leaving about 1 tablespoon in the pot for flavor.
  3. Melt the butter over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Sprinkle the flour over the onion mixture and cook, stirring constantly, for 1-2 minutes until lightly browned.
  5. Gradually whisk in the chicken broth until smooth. Bring to a boil.
  6. Add the diced potatoes, reduce the heat to low, cover, and simmer for 15-20 minutes or until the potatoes are tender.
  7. Lightly mash the potatoes with a potato masher to your desired consistency.
  8. Stir in the heavy cream, shredded cheddar cheese, sour cream, salt, and pepper. Cook until the cheese melts and everything is heated through.
  9. Serve the soup hot, garnished with crumbled bacon, sliced green onions, and any additional toppings you like.

Notes

For extra creaminess, consider using Yukon Gold potatoes. Adding a touch of smoked paprika can elevate the flavor profile.
