Description

A rich and creamy loaded potato soup that’s perfect for family dinners or chilly evenings.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chives, for garnish


Instructions

  1. In a large pot, cook the diced onion and garlic over medium heat until they soften.
  2. Add the diced potatoes and pour in the chicken broth; bring this mix to a gentle boil.
  3. Once boiling, reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  4. Grab a potato masher and mash some of the potatoes directly in the pot to achieve a thicker texture.
  5. Stir in the heavy cream, shredded cheddar cheese, and crumbled bacon, mixing until the cheese melts.
  6. Season generously with salt and pepper to suit your taste.
  7. Serve the soup hot, garnished with fresh chives for a pop of color.

Notes

For a creamier texture, consider using Yukon Gold potatoes or vegetable broth for a vegetarian option. Serve in rustic bread bowls for a fun twist.
