Description
A rich and creamy loaded potato soup that’s perfect for family dinners or chilly evenings.
Ingredients
- 4 large russet potatoes, peeled and diced
- 6 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chives, for garnish
Instructions
- In a large pot, cook the diced onion and garlic over medium heat until they soften.
- Add the diced potatoes and pour in the chicken broth; bring this mix to a gentle boil.
- Once boiling, reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
- Grab a potato masher and mash some of the potatoes directly in the pot to achieve a thicker texture.
- Stir in the heavy cream, shredded cheddar cheese, and crumbled bacon, mixing until the cheese melts.
- Season generously with salt and pepper to suit your taste.
- Serve the soup hot, garnished with fresh chives for a pop of color.
Notes
For a creamier texture, consider using Yukon Gold potatoes or vegetable broth for a vegetarian option. Serve in rustic bread bowls for a fun twist.
