Description

A refreshing and vibrant mango slaw that combines sweet mango with crunchy vegetables for a perfect summer side dish.


Ingredients

  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, grated
  • 1 ripe mango, diced
  • 1/2 red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons honey (or agave syrup for a vegan option)
  • Salt and pepper to taste


Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, red bell pepper, mango, and cilantro.
  2. In a separate bowl, whisk together the lime juice, honey, salt, and pepper until well mixed.
  3. Pour the dressing over the cabbage mixture, tossing everything together until fully coated.
  4. Let the slaw sit for about 10 minutes to allow the flavors to meld together before serving.

Notes

Try adding sliced jalapeños for a spicy kick or chopped nuts for extra crunch.
