Ingredients
- 2 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 cup carrots, grated
- 1 ripe mango, diced
- 1/2 red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons honey (or agave syrup for a vegan option)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the green cabbage, red cabbage, carrots, red bell pepper, mango, and cilantro.
- In a separate bowl, whisk together the lime juice, honey, salt, and pepper until well mixed.
- Pour the dressing over the cabbage mixture, tossing everything together until fully coated.
- Let the slaw sit for about 10 minutes to allow the flavors to meld together before serving.
