Description

A comforting dish featuring tender chicken and sweet, caramelized sweet potatoes, enhanced with a tangy maple Dijon sauce.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 sweet potatoes, cubed
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (optional, for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cubed sweet potatoes, olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25 minutes, or until tender.
  4. Meanwhile, in a small bowl, whisk together the maple syrup, Dijon mustard, minced garlic, and a pinch of salt.
  5. In a skillet over medium heat, add olive oil and cook the chicken breasts until golden and cooked through, about 6-7 minutes per side.
  6. Pour the maple Dijon sauce over the chicken and let it simmer for a couple of minutes.
  7. Serve the chicken over a bed of roasted sweet potatoes, drizzling extra sauce on top.

Notes

For extra flavor, marinate the chicken in the maple Dijon sauce for a few hours before cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
