Description

Deliciously creamy cheesecake bites with a zesty lime twist and a hint of tequila, perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup tequila
  • 1/4 cup freshly squeezed lime juice
  • Zest of 1 lime


Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a mini muffin tin with liners.
  2. Combine graham cracker crumbs and melted butter in a bowl. Press this mixture firmly into the bottom of each liner.
  3. Beat the softened cream cheese in a separate mixing bowl until smooth, then mix in the sour cream and sugar until well-blended.
  4. Add eggs, tequila, lime juice, and lime zest, and mix until the batter is smooth and creamy.
  5. Spoon the cheesecake filling over the crusts in the muffin tin, filling them about three-quarters full.
  6. Bake for about 15 minutes, or until the centers are set but still slightly jiggly.
  7. Cool at room temperature before transferring to the fridge to chill for at least 2 hours.
