Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup sugar
- 2 large eggs
- 1/4 cup tequila
- 1/4 cup freshly squeezed lime juice
- Zest of 1 lime
Instructions
- Preheat your oven to 325°F (163°C) and prepare a mini muffin tin with liners.
- Combine graham cracker crumbs and melted butter in a bowl. Press this mixture firmly into the bottom of each liner.
- Beat the softened cream cheese in a separate mixing bowl until smooth, then mix in the sour cream and sugar until well-blended.
- Add eggs, tequila, lime juice, and lime zest, and mix until the batter is smooth and creamy.
- Spoon the cheesecake filling over the crusts in the muffin tin, filling them about three-quarters full.
- Bake for about 15 minutes, or until the centers are set but still slightly jiggly.
- Cool at room temperature before transferring to the fridge to chill for at least 2 hours.
