A delightful pasta dish with tender chicken in a creamy sauce, sun-dried tomatoes, and fresh basil for a comforting meal.
Ingredients
- 1 lb boneless, skinless chicken breast
- 8 oz fettuccine or penne pasta
- 1/2 cup sun-dried tomatoes (jarred in oil)
- 1/4 cup fresh basil (or dried)
- 3 garlic cloves (minced)
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Boil a pot of salted water and cook the pasta according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and sauté until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes, sautéing until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
- Add cooked chicken back into the skillet, allowing flavors to meld. Mix in the drained pasta, tossing to coat it in the sauce.
- Finish by adding grated Parmesan and fresh basil, stirring until the cheese melts and the dish is evenly mixed.
Notes
Serve fresh from the stove. A side of garlic bread or a light green salad pairs well. For added spice, top with red pepper flakes.
