Description

A delightful pasta dish with tender chicken in a creamy sauce, sun-dried tomatoes, and fresh basil for a comforting meal.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 8 oz fettuccine or penne pasta
  • 1/2 cup sun-dried tomatoes (jarred in oil)
  • 1/4 cup fresh basil (or dried)
  • 3 garlic cloves (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Boil a pot of salted water and cook the pasta according to package instructions until al dente.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and sauté until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes, sautéing until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
  5. Add cooked chicken back into the skillet, allowing flavors to meld. Mix in the drained pasta, tossing to coat it in the sauce.
  6. Finish by adding grated Parmesan and fresh basil, stirring until the cheese melts and the dish is evenly mixed.

Notes

Serve fresh from the stove. A side of garlic bread or a light green salad pairs well. For added spice, top with red pepper flakes.
