Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta of choice (penne or fettuccine)
  • 2 cups chicken broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper, then cook for about 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, add minced garlic and cook for a minute until fragrant.
  3. Pour in chicken broth and bring to a gentle boil, then reduce heat and stir in the cream and Italian seasoning.
  4. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.
  5. Cook the pasta according to package instructions; drain and add it to the sauce.
  6. Slice the chicken and return it to the pan, adding grated Parmesan. Toss gently to combine, allowing the cheese to melt into the sauce.
  7. Serve immediately, garnished with fresh basil.
