Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz pasta of choice (penne or fettuccine)
- 2 cups chicken broth
- 1 cup heavy cream (or coconut milk for dairy-free)
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup grated Parmesan cheese
- Fresh basil for garnish
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Season the chicken with salt and pepper, then cook for about 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook for a minute until fragrant.
- Pour in chicken broth and bring to a gentle boil, then reduce heat and stir in the cream and Italian seasoning.
- Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.
- Cook the pasta according to package instructions; drain and add it to the sauce.
- Slice the chicken and return it to the pan, adding grated Parmesan. Toss gently to combine, allowing the cheese to melt into the sauce.
- Serve immediately, garnished with fresh basil.
