Description

Delicious make-ahead breakfast burritos perfect for busy mornings, packed with flavor and nutrition.


Ingredients

  • Tortillas (flour or corn)
  • Eggs
  • Shredded cheese
  • Bell peppers, diced
  • Onions, diced
  • Spinach (or your choice of greens)
  • Ground beef, cooked
  • Salsa (optional for serving)


Instructions

  1. Cook ground beef in a skillet over medium heat until browned; drain excess fat.
  2. Add diced onions and bell peppers; sauté until softened.
  3. Whisk eggs in a bowl and pour into the skillet, cooking until set.
  4. Stir in cooked beef and spinach until well combined.
  5. Remove the mixture from heat and let it cool slightly.
  6. Spoon some filling across the center of a tortilla and sprinkle with shredded cheese.
  7. Roll the tortilla tightly, folding in the sides as you go.
  8. Repeat for remaining tortillas.
  9. Wrap each burrito individually in foil or parchment paper for storage.

Notes

Serve with salsa or fresh fruit. Store wrapped in the refrigerator or freeze for longer storage.
