Ingredients
- Tortillas (flour or corn)
- Eggs
- Shredded cheese
- Bell peppers, diced
- Onions, diced
- Spinach (or your choice of greens)
- Ground beef, cooked
- Salsa (optional for serving)
Instructions
- Cook ground beef in a skillet over medium heat until browned; drain excess fat.
- Add diced onions and bell peppers; sauté until softened.
- Whisk eggs in a bowl and pour into the skillet, cooking until set.
- Stir in cooked beef and spinach until well combined.
- Remove the mixture from heat and let it cool slightly.
- Spoon some filling across the center of a tortilla and sprinkle with shredded cheese.
- Roll the tortilla tightly, folding in the sides as you go.
- Repeat for remaining tortillas.
- Wrap each burrito individually in foil or parchment paper for storage.
