Description

High in protein and packed with flavors, these breakfast burritos are a filling and energizing way to start your day.


Ingredients

  • 4 large tortillas (whole wheat)
  • 1 cup cooked ground beef
  • 1 cup egg whites (or whole eggs)
  • 1 cup bell peppers, diced
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup shredded cheese (any variety that melts well)
  • Salt and pepper to taste
  • Optional: salsa, avocados, or Greek yogurt for serving


Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Toss in the bell peppers and cook for 3-4 minutes until softened. If using frozen spinach, add it in now and cook until heated through.
  3. In a separate bowl, whisk egg whites with salt and pepper. Pour them into a non-stick skillet over medium heat, and cook until set, stirring gently.
  4. Mix the cooked beef and veggies with the scrambled eggs in one skillet. Stir in the shredded cheese until melted and thoroughly combined.
  5. Spoon the mixture onto each tortilla, fold in the sides, and roll tightly.
  6. Enjoy immediately or allow to cool before storing for later.

Notes

For added flavor, spice up the beef with taco seasoning or your choice of spices. Prepping the filling ahead of time can save you valuable minutes in the morning.
