- Fresh spinach (about 4 cups)
- Cherry tomatoes (2 cups, halved)
- Feta cheese (1 block)

- Garlic (2 cloves, minced)

- Eggs (4 large)
- Fresh herbs for garnish (optional, like basil or parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine halved cherry tomatoes, fresh spinach, and minced garlic. Drizzle with olive oil and season with salt and pepper; toss to combine.
- Create small wells in the mixture and place the block of feta in the center.
- Bake in the oven for about 20 minutes, or until the tomatoes are blistered and the feta is golden.
- Remove the dish from the oven and crack the eggs into the wells around the feta. Return to the oven and bake for an additional 5-7 minutes, or until the eggs are set to your liking.
- Garnish with fresh herbs, if desired, and serve warm.
