Description

Ingredients

  • Fresh spinach (about 4 cups)
  • Cherry tomatoes (2 cups, halved)
  • Feta cheese (1 block)
  • Olive oil (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Salt and pepper (to taste)
  • Eggs (4 large)
  • Fresh herbs for garnish (optional, like basil or parsley)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine halved cherry tomatoes, fresh spinach, and minced garlic. Drizzle with olive oil and season with salt and pepper; toss to combine.
  3. Create small wells in the mixture and place the block of feta in the center.
  4. Bake in the oven for about 20 minutes, or until the tomatoes are blistered and the feta is golden.
  5. Remove the dish from the oven and crack the eggs into the wells around the feta. Return to the oven and bake for an additional 5-7 minutes, or until the eggs are set to your liking.
  6. Garnish with fresh herbs, if desired, and serve warm.

Notes

For a richer taste, consider adding a drizzle of balsamic reduction before serving. Customize the dish with different vegetables or cheese alternatives.
