Description
Delicious Mediterranean chicken gyros loaded with fresh vegetables and drizzled with creamy feta tzatziki, perfect for weeknight dinners or casual brunch.
Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 pita breads
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Fresh parsley for garnish
Instructions
- In a bowl, mix together olive oil, oregano, garlic powder, salt, and pepper. Add the chicken thighs and thoroughly coat them with the marinade. For best results, let them marinate for at least 30 minutes.
- Heat a skillet over medium-high heat. Place the marinated chicken in the skillet and cook for 5-7 minutes per side until it’s nicely browned and reaches an internal temperature of 165°F (75°C).
- While the chicken is cooking, combine Greek yogurt, crumbled feta cheese, lemon juice, minced garlic, and a pinch of salt and pepper in a bowl. Mix until smooth and creamy.
- Once the chicken is done, slice it into strips. To build your gyro, take a pita bread, spread a generous amount of tzatziki, layer on the chicken, and add the halved cherry tomatoes, diced cucumber, and sliced red onion. Roll it up, and enjoy!
Notes
For a leaner option, you can use chicken breasts or substitute the dairy with a vegan yogurt for a plant-based version. Best enjoyed with fresh herbs and veggies.
