Ingredients
- 2 chicken breasts, diced
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 bell peppers, diced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 3 cups chicken broth
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley, chopped
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken, season with salt and pepper, and cook until browned.
- Stir in the onion, garlic, and bell peppers; cook until softened.
- Pour in the orzo, along with chicken broth and oregano.
- Bring the mixture to a boil, then reduce heat and simmer until orzo is tender.
- Fold in the spinach and cherry tomatoes; allow to cook for a few minutes.
- Remove from heat, stir in feta cheese, lemon juice, and zest.
- Garnish with fresh parsley before serving.
Notes
This dish can be served warm or as a cold salad. Great paired with Greek yogurt or cucumber salad.
