Description

A delightful one-pot dish combining tender chicken and satisfying orzo, enriched with vibrant vegetables and Mediterranean flavors.


Ingredients

  • 2 chicken breasts, diced
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 bell peppers, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 3 cups chicken broth
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced chicken, season with salt and pepper, and cook until browned.
  3. Stir in the onion, garlic, and bell peppers; cook until softened.
  4. Pour in the orzo, along with chicken broth and oregano.
  5. Bring the mixture to a boil, then reduce heat and simmer until orzo is tender.
  6. Fold in the spinach and cherry tomatoes; allow to cook for a few minutes.
  7. Remove from heat, stir in feta cheese, lemon juice, and zest.
  8. Garnish with fresh parsley before serving.

Notes

This dish can be served warm or as a cold salad. Great paired with Greek yogurt or cucumber salad.
