Description

A flavorful Mediterranean dish with juicy chicken and tender zucchini, perfect for any meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced into thin rounds
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Fresh parsley, for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine zucchini, cherry tomatoes, sliced onion, and minced garlic in a large bowl. Drizzle with olive oil, sprinkle with oregano, basil, salt, and pepper, then toss to coat evenly.
  3. Arrange the vegetable mixture in a baking dish, creating a bed for the chicken.
  4. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Place them on top of the vegetables.
  5. Bake in the preheated oven for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  6. Remove from the oven and let rest for a few minutes before garnishing with fresh parsley and serving.

Notes

Marinate chicken for a couple of hours to enhance tenderness. Adjust vegetables based on preference.
