Ingredients
- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced into thin rounds
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Olive oil, for drizzling
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine zucchini, cherry tomatoes, sliced onion, and minced garlic in a large bowl. Drizzle with olive oil, sprinkle with oregano, basil, salt, and pepper, then toss to coat evenly.
- Arrange the vegetable mixture in a baking dish, creating a bed for the chicken.
- Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Place them on top of the vegetables.
- Bake in the preheated oven for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
- Remove from the oven and let rest for a few minutes before garnishing with fresh parsley and serving.
Notes
Marinate chicken for a couple of hours to enhance tenderness. Adjust vegetables based on preference.
