Ingredients
- 1 can chickpeas, drained and rinsed
- 1 can tuna in water, drained
- 1/4 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/4 cup red bell pepper, diced
- 2 tablespoons parsley, chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- In a medium bowl, combine the drained chickpeas and tuna. Use a fork to flake the tuna and mash some of the chickpeas, creating a hearty texture.
- Add in the red onion, cucumber, red bell pepper, and parsley. Stir until evenly mixed.
- Drizzle the lemon juice and olive oil over the mixture. Gently fold everything together to ensure even coating.
- Season with salt and pepper to taste. Adjust the flavors as desired.
- Chill in the refrigerator for about 10 minutes to let the flavors blend.
