Description

A quick and healthy Mediterranean-inspired chickpea tuna salad that combines nutty chickpeas, zesty lemon, and fresh herbs for a satisfying meal.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can tuna in water, drained
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1/4 cup red bell pepper, diced
  • 2 tablespoons parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste


Instructions

  1. In a medium bowl, combine the drained chickpeas and tuna. Use a fork to flake the tuna and mash some of the chickpeas, creating a hearty texture.
  2. Add in the red onion, cucumber, red bell pepper, and parsley. Stir until evenly mixed.
  3. Drizzle the lemon juice and olive oil over the mixture. Gently fold everything together to ensure even coating.
  4. Season with salt and pepper to taste. Adjust the flavors as desired.
  5. Chill in the refrigerator for about 10 minutes to let the flavors blend.

Notes

For added flavor, consider mixing in a teaspoon of Dijon mustard or a dash of hot sauce. This salad keeps well in the fridge for 3 days, improving in flavor over time.
