Description

A flavorful Mexican-inspired appetizer served in individual cups, perfect for sharing at parties or gatherings.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced tomatoes, drained
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 cup sour cream or Greek yogurt
  • 1 avocado, diced
  • 1/2 cup sliced olives
  • 1/4 cup chopped cilantro
  • Lime wedges, for serving
  • Tortilla chips, for dipping


Instructions

  1. Combine the black beans and corn in a mixing bowl. Season with a pinch of salt and pepper, then set aside.
  2. Layer the ingredients in small cups, starting with a scoop of the bean and corn mixture at the bottom.
  3. Add a spoonful of diced tomatoes followed by a sprinkle of shredded cheese.
  4. Layer a dollop of sour cream on top, smoothing it out gently.
  5. Add the diced avocado, olives, and finish with a sprinkle of cilantro.
  6. Repeat the layering until the cups are filled, leaving some space at the top for garnish.
  7. Serve immediately with lime wedges and tortilla chips alongside.

Notes

To prevent avocado from browning, add lime juice when dicing. Customize with additional toppings like jalapeños or salsa for extra flavor.
