Ingredients
- 4 ears of fresh corn (or 2 cups of frozen corn, thawed)
- 1 cup mayonnaise
- 1 cup crumbled cotija cheese (substitute feta if desired)
- 1/2 cup sour cream
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Prepare the corn: If using fresh corn, grill or roast it until lightly charred. Allow it to cool slightly, then cut the kernels off the cob. If using frozen corn, sauté it in a pan until warmed through and lightly caramelized.
- Combine the base: In a mixing bowl, combine mayonnaise, sour cream, lime juice, and chili powder. Mix until smooth.
- Add cheese and corn: Fold in the corn kernels and crumbled cotija cheese gently, ensuring everything is well combined.
- Season: Taste and adjust the seasoning with salt and pepper as necessary.
- Serve it up: Transfer the dip to a serving bowl. Garnish with additional cotija cheese and chopped cilantro if desired.
Notes
For best flavor, let the dip sit for at least 30 minutes in the fridge before serving. Can be prepared a day ahead. If dip thickens, add a splash of lime juice or sour cream to restore consistency.
