Ingredients
- 3 cups cooked chicken, shredded
- 1 cup sour cream
- 1 can cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup crushed crackers (like Ritz)
- 1 stick of butter, melted
- Salt and pepper to taste
- 1 cup of diced vegetables (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cooked shredded chicken, sour cream, cream of chicken soup, and half the cheddar cheese. Season with salt and pepper.
- Transfer this mixture to a greased 9×13 inch casserole dish, spreading it evenly.
- In another bowl, mix the crushed crackers with the melted butter until well combined.
- Sprinkle the cracker mixture evenly over the chicken mixture in the casserole dish.
- Top it all off with the remaining cheddar cheese.
- Bake for 25 minutes, or until the casserole is bubbly and golden on top.
- Let it cool for a few minutes before serving.
Notes
Garnish with fresh parsley or a sprinkle of paprika. Store leftovers in the fridge for up to four days.
