Description

A creamy, savory chicken casserole topped with a crunchy cracker mixture, perfect for weeknight dinners or family gatherings.


Ingredients

  • 3 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup crushed crackers (like Ritz)
  • 1 stick of butter, melted
  • Salt and pepper to taste
  • 1 cup of diced vegetables (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cooked shredded chicken, sour cream, cream of chicken soup, and half the cheddar cheese. Season with salt and pepper.
  3. Transfer this mixture to a greased 9×13 inch casserole dish, spreading it evenly.
  4. In another bowl, mix the crushed crackers with the melted butter until well combined.
  5. Sprinkle the cracker mixture evenly over the chicken mixture in the casserole dish.
  6. Top it all off with the remaining cheddar cheese.
  7. Bake for 25 minutes, or until the casserole is bubbly and golden on top.
  8. Let it cool for a few minutes before serving.

Notes

Garnish with fresh parsley or a sprinkle of paprika. Store leftovers in the fridge for up to four days.
