Description

This comforting meatloaf features a blend of rich flavors and a unique glaze that caramelizes beautifully, making it a staple in any kitchen.


Ingredients

  • 1 1/2 cups crushed buttery crackers (such as Ritz)
  • 2/3 cup evaporated milk
  • 2 large eggs, lightly beaten
  • 1 medium onion, grated
  • 4 cloves garlic, minced
  • 2 tablespoons ketchup or chili sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 2 pounds ground beef
  • 2/3 cup ketchup (for glaze)
  • 3 tablespoons pepper jelly
  • 2 tablespoons brown sugar
  • 1 teaspoon hot sauce


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil or parchment paper and lightly coat it with cooking spray.
  2. In a large mixing bowl, combine the crushed crackers, evaporated milk, eggs, grated onion, minced garlic, ketchup (or chili sauce), Worcestershire sauce, Italian seasoning, salt, pepper, and parsley. Allow the mixture to sit for 5 minutes, letting the flavors meld and the crackers soften.
  3. Gently add the ground beef to the mixture, combining it by hand until just mixed. Avoid overworking the meat.
  4. Transfer the meat mixture onto the prepared baking sheet, shaping it into an even loaf—approximately 9×5 inches. Ensure it’s compact but not overly packed.
  5. In a separate bowl, whisk together the ketchup, pepper jelly, brown sugar, and hot sauce until smooth.
  6. Coat half of the glaze over the top of the meatloaf, using a brush or spoon. Bake for 45 minutes, allowing the flavors to meld and the glaze to caramelize.
  7. After 45 minutes, remove the loaf from the oven and evenly distribute the remaining glaze on top. Return it to the oven and bake for an additional 20–30 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C).
  8. Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes. Slice into portions and serve warm.

Notes

For a lighter version, swap ground beef with turkey or a plant-based alternative. Serve with fluffy mashed potatoes or roasted vegetables for a complete meal.
