Description

Delightful bite-sized chicken quesadillas that are crispy on the outside and gooey on the inside, perfect for any gathering or snack.


Ingredients

  • 1 cup cooked chicken, shredded or diced (rotisserie chicken works well)
  • 4 flour tortillas or corn tortillas
  • 1 cup shredded cheese (like cheddar or Monterey Jack)
  • 1 bell pepper, sliced (optional)
  • 1 onion, sliced (optional)
  • 1 tablespoon olive oil or butter for cooking
  • Salsa and sour cream for serving (optional)


Instructions

  1. Heat a skillet over medium heat and add a small amount of olive oil or butter.
  2. Place one tortilla in the skillet, then layer your desired amount of cooked chicken, cheese, and additional toppings on one half.
  3. Fold the tortilla over and press down gently. Cook until the bottom is golden brown, about 2-3 minutes.
  4. Flip carefully and continue to cook until the cheese is melted and the other side is golden, another 2-3 minutes.
  5. Remove from the skillet and let cool slightly. Cut into wedges and serve warm.

Notes

For the best results, make sure the skillet is hot to create that delicious crispy texture. Use pre-cooked chicken for quicker prep.
