Description

Delightful and refreshing mini tarts with a zesty key lime filling and buttery crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • ½ cup key lime juice
  • 3 egg yolks
  • Zest of 1 key lime


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press the mixture into the bottom and sides of mini tart pans.
  4. Bake the crust for about 10 minutes or until golden and fragrant. Let cool.
  5. Whisk together the sweetened condensed milk, egg yolks, and key lime juice until smooth in another bowl.
  6. Pour the filling into the cooled crusts.
  7. Chill in the fridge for at least 1 hour, allowing the filling to set properly.
  8. Garnish with whipped cream and lime slices before serving, if desired.

Notes

Best enjoyed chilled, consider garnishing with freshly whipped cream and fresh berries.
