Description

This miso-glazed eggplant showcases the rich umami flavors and transforms the vegetable into a savory treat, perfect for main or side dishes.


Ingredients

  • 1 large eggplant, sliced into rounds
  • 3 tablespoons miso paste (white or yellow)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped
  • Sesame seeds for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together the miso paste, rice vinegar, honey, sesame oil, and grated ginger until smooth.
  3. Place the sliced eggplant on a baking sheet lined with parchment paper and brush both sides with the miso glaze.
  4. Roast the eggplant for about 20 minutes, turning once halfway through, until tender and caramelized.
  5. Remove from the oven, sprinkle with chopped green onions and sesame seeds before serving.

Notes

For extra flavor, marinate the eggplant in the glaze for an hour before cooking. Serve with steamed rice or quinoa.
