Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ½ tsp salt
- 1 cup buttermilk (or milk mixed with vinegar)
- ½ cup vegetable oil (or melted coconut oil)
- 3 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, spices, and salt.
- In a separate bowl, combine the buttermilk, oil, eggs, and vanilla. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Pour the batter into the prepared pan. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
