Ingredients
- 4 chicken breasts (skinless, boneless)
- 1 cup all-purpose flour (for dredging)
- 1 cup chicken broth
- ½ cup white wine (or extra broth)
- 2 tablespoons lemon juice
- 1 cup mushrooms (sliced)
- 1 tablespoon fresh parsley (chopped)
- Olive oil
- Salt and pepper, to taste
Instructions
- Season the chicken breasts with salt and pepper.
- Dredge the chicken in flour, ensuring an even coating.
- In a large skillet, heat olive oil over medium heat.
- Cook the chicken for about 5-7 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add mushrooms and sauté until tender.
- Pour in white wine (or extra broth), scraping up any browned bits, and let it reduce slightly.
- Stir in the lemon juice and chicken broth, cooking for a few minutes.
- Return the chicken to the skillet, spoon sauce over it, and simmer for 10 minutes until cooked through.
- Garnish with fresh parsley before serving.
Notes
For enhanced flavor, consider marinating the chicken in lemon juice and garlic for a few hours before cooking. Using a meat thermometer can ensure your chicken is perfectly cooked.
