Ingredients

  • 4 chicken breasts (skinless, boneless)
  • 1 cup all-purpose flour (for dredging)
  • 1 cup chicken broth
  • ½ cup white wine (or extra broth)
  • 2 tablespoons lemon juice
  • 1 cup mushrooms (sliced)
  • 1 tablespoon fresh parsley (chopped)
  • Olive oil
  • Salt and pepper, to taste


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge the chicken in flour, ensuring an even coating.
  3. In a large skillet, heat olive oil over medium heat.
  4. Cook the chicken for about 5-7 minutes on each side until golden brown. Remove and set aside.
  5. In the same skillet, add mushrooms and sauté until tender.
  6. Pour in white wine (or extra broth), scraping up any browned bits, and let it reduce slightly.
  7. Stir in the lemon juice and chicken broth, cooking for a few minutes.
  8. Return the chicken to the skillet, spoon sauce over it, and simmer for 10 minutes until cooked through.
  9. Garnish with fresh parsley before serving.
