Ingredients
- 8 ounces pasta (like rotini or penne)
- 4 slices beef bacon, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 bell pepper, diced (any color)
- 1/4 cup olives (green or black), sliced
- 1/2 cup Italian dressing (or your choice of dressing)
- Salt and pepper to taste
Instructions
- Start by bringing a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside to cool.
- While the pasta cooks, heat a skillet over medium heat. Add the chopped beef bacon and cook until it becomes crispy, about 6-8 minutes.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, and olives.
- Once the pasta has cooled, add it to the bowl with the vegetables.
- Stir in the crispy beef bacon and drizzle the Italian dressing over the top. Gently toss until everything is well-coated. Season with salt and pepper to taste.
- Let the salad sit for about 10 minutes before serving to allow the flavors to meld beautifully.
Notes
