Description

A delightful pasta salad featuring beef bacon and fresh vegetables, perfect for gatherings or as a satisfying family meal.


Ingredients

  • 8 ounces pasta (like rotini or penne)
  • 4 slices beef bacon, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 bell pepper, diced (any color)
  • 1/4 cup olives (green or black), sliced
  • 1/2 cup Italian dressing (or your choice of dressing)
  • Salt and pepper to taste


Instructions

  1. Start by bringing a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  2. While the pasta cooks, heat a skillet over medium heat. Add the chopped beef bacon and cook until it becomes crispy, about 6-8 minutes.
  3. In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, and olives.
  4. Once the pasta has cooled, add it to the bowl with the vegetables.
  5. Stir in the crispy beef bacon and drizzle the Italian dressing over the top. Gently toss until everything is well-coated. Season with salt and pepper to taste.
  6. Let the salad sit for about 10 minutes before serving to allow the flavors to meld beautifully.

Notes

This pasta salad can be served chilled or at room temperature. It pairs well with grilled meats or as a side at picnics.
