A hearty stuffed meatloaf filled with gooey mozzarella, perfect for family gatherings or a cozy weeknight dinner.
Ingredients
- 2 lbs ground beef (80/20)
- 1/2 cup breadcrumbs (Italian seasoned)
- 2 large eggs
- 1/2 cup milk
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 1/2 cups shredded mozzarella
- A handful of chopped parsley (optional)
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 375°F. Line a baking sheet with foil or use a loaf pan, sprayed with nonstick spray.
- In a large bowl, combine the ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, tomato paste, salt, pepper, oregano, and basil. Mix gently until just combined.
- On a clean surface, shape half the meat mixture into a loaf base. Fill the middle with shredded mozzarella, then cover with remaining meat mixture and seal the edges.
- In a small bowl, mix ketchup, brown sugar, and balsamic vinegar for the glaze. Brush over the meatloaf.
- Bake for 50–60 minutes or until the internal temperature reaches 160°F. Cover with foil if browning too much.
- Let rest for about 10 minutes before slicing.
Notes
For a truly gooey experience, mix mozzarella with another melty cheese like cheddar or provolone. You can customize the glaze with BBQ sauce for a sweet and smoky twist.
