Description

Delightful mini apple pies baked in a muffin tin, perfect for sharing and any occasion.


Ingredients

  • 2 large apples, peeled, cored, and diced
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 package refrigerated pie crusts
  • 1 egg, beaten (for egg wash)
  • Optional: whipped cream or ice cream for serving


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a bowl, combine the diced apples, sugar, cinnamon, and lemon juice.
  3. Roll out the pie crusts and cut them into circles to fit into the muffin tin.
  4. Press the circles into the muffin tin and fill each with the apple mixture.
  5. Cover with additional pie crust circles or lattice tops if desired. Brush with beaten egg.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let cool slightly and serve with whipped cream or ice cream.

Notes

Choose a mix of sweet and tart apples for more flavor. Don’t overfill the muffin tin. Let pies cool before removing from tin.
