Ingredients
- 2 cups leftover turkey, shredded
- 2 cups stuffing mix (homemade or store-bought)
- 1/2 cup gravy
- 2 large eggs
- 1/2 cup chicken broth
- 1 cup shredded cheese (optional)
- Seasoning (salt, pepper, and herbs)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the shredded turkey and stuffing mix until well-blended.
- In another bowl, whisk together the eggs and chicken broth until frothy.
- Pour the egg mixture into the turkey and stuffing mix, stirring until everything is evenly coated.
- Grease a muffin tin with cooking spray or oil. Spoon the mixture into each cup, filling them about 3/4 full.
- Top each cup with a drizzle of gravy and a sprinkle of cheese, if desired.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and heated through.
- Allow to cool slightly before serving to ensure they hold their shape.
