Description

A creative way to repurpose leftover turkey into savory, bite-sized muffin cups, perfect for any occasion!


Ingredients

  • 2 cups leftover turkey, shredded
  • 2 cups stuffing mix (homemade or store-bought)
  • 1/2 cup gravy
  • 2 large eggs
  • 1/2 cup chicken broth
  • 1 cup shredded cheese (optional)
  • Seasoning (salt, pepper, and herbs)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the shredded turkey and stuffing mix until well-blended.
  3. In another bowl, whisk together the eggs and chicken broth until frothy.
  4. Pour the egg mixture into the turkey and stuffing mix, stirring until everything is evenly coated.
  5. Grease a muffin tin with cooking spray or oil. Spoon the mixture into each cup, filling them about 3/4 full.
  6. Top each cup with a drizzle of gravy and a sprinkle of cheese, if desired.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and heated through.
  8. Allow to cool slightly before serving to ensure they hold their shape.

Notes

These cups can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
