Description

A hearty and flavorful Instant Pot black-eyed peas recipe, perfect for family gatherings and New Year celebrations.

Ingredients

  • 1 tablespoon butter
  • 1 large carrot, diced
  • 1 cup onion, diced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon diced garlic
  • 2 large bay leaves
  • 3 cups diced ham or a leftover ham bone
  • 1 lb. dried black-eyed peas (rinsed and picked through)
  • 6 cups chicken stock

Instructions

  1. Start by melting the butter in your Instant Pot on the sauté setting.
  2. Add the diced onion, carrots, salt, and black pepper. Sauté for about 3 minutes to soften the onions.
  3. Toss in the minced garlic and sauté for an additional minute, until fragrant.
  4. Stir in the diced ham, black-eyed peas, and bay leaves.
  5. Pour in the chicken stock and mix well with a large spoon.
  6. Secure the lid on the Instant Pot, ensuring it’s locked into place.
  7. Check that the pressure valve is set to sealing.
  8. Press the manual button and set the timer for 30 minutes.
  9. Allow the pressure to build and cook for 30 minutes.
  10. After the cooking time, let the steam naturally release for 15 minutes.
  11. Carefully switch the valve to release any remaining steam, then open the lid, avoiding direct steam exposure.
