Quick and easy energy balls made with rolled oats, nut butter, and honey, perfect for a healthy snack.
Ingredients
- 1 cup rolled oats (gluten-free option available)
- 1/2 cup nut butter (almond, peanut, or sunbutter)
- 1/3 cup honey or maple syrup
- 1/4 cup chocolate chips or dried fruit (optional)
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- In a large mixing bowl, combine the rolled oats and nut butter.
- Add in the honey, vanilla extract, and salt. Mix well until everything is combined.
- Fold in your choice of chocolate chips or dried fruit.
- Scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
- Place the rolled balls on a baking sheet lined with parchment paper.
- Refrigerate the energy balls for at least 30 minutes to help them firm up.

Store in an airtight container in the fridge for up to a week or freeze for up to three months.
