Description

Quick and easy energy balls made with rolled oats, nut butter, and honey, perfect for a healthy snack.


Ingredients

  • 1 cup rolled oats (gluten-free option available)
  • 1/2 cup nut butter (almond, peanut, or sunbutter)
  • 1/3 cup honey or maple syrup
  • 1/4 cup chocolate chips or dried fruit (optional)
  • 1/2 tsp vanilla extract
  • Pinch of salt


Instructions

  1. In a large mixing bowl, combine the rolled oats and nut butter.
  2. Add in the honey, vanilla extract, and salt. Mix well until everything is combined.
  3. Fold in your choice of chocolate chips or dried fruit.
  4. Scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
  5. Place the rolled balls on a baking sheet lined with parchment paper.
  6. Refrigerate the energy balls for at least 30 minutes to help them firm up.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to three months.
