Ingredients
- 1 cup pumpkin puree
- 1/2 cup protein powder (vanilla or unflavored)
- 1/4 cup oats (old-fashioned or quick oats)
- 1/4 cup nut butter (peanut, almond, or cashew)
- 1 tsp pumpkin spice
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate chips (optional)
Instructions
- In a large bowl, mix together pumpkin puree, protein powder, oats, nut butter, pumpkin spice, and honey or maple syrup until fully combined.
- If using, fold in the chocolate chips.
- Scoop out the mixture and roll it into small balls (about 1 inch in diameter).
- Place the balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to allow them to set.
- Enjoy as a quick snack or breakfast!
Notes
Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Layer between parchment paper to prevent sticking.
