Description

A moist and luscious cake that combines the classic flavors of oatmeal cream pies into a delightful dessert, perfect for any gathering.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup rolled oats
  • ½ cup buttermilk
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup marshmallow fluff
  • 1 tsp vanilla extract (for filling)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mix the flour, sugar, baking powder, baking soda, salt, and oats.
  3. In another bowl, whisk together buttermilk, oil, eggs, and vanilla.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Divide the batter evenly into the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. For the filling, beat the butter until creamy, then slowly add powdered sugar, marshmallow fluff, and vanilla until smooth.
  9. Once the cakes are cool, place one layer on a serving platter and spread a generous portion of filling on top. Add the second layer and frost the top and sides.

Notes

For an extra depth of flavor, consider adding a pinch of cinnamon to the batter. You can also customize the filling by swapping vanilla extract for almond or adding shredded coconut or mini chocolate chips.
