A moist and luscious cake that combines the classic flavors of oatmeal cream pies into a delightful dessert, perfect for any gathering.
Ingredients
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup rolled oats
- ½ cup buttermilk
- ½ cup vegetable oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ½ cup marshmallow fluff
- 1 tsp vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, mix the flour, sugar, baking powder, baking soda, salt, and oats.
- In another bowl, whisk together buttermilk, oil, eggs, and vanilla.
- Combine the wet and dry ingredients, mixing until just combined.
- Divide the batter evenly into the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the filling, beat the butter until creamy, then slowly add powdered sugar, marshmallow fluff, and vanilla until smooth.
- Once the cakes are cool, place one layer on a serving platter and spread a generous portion of filling on top. Add the second layer and frost the top and sides.
Notes
For an extra depth of flavor, consider adding a pinch of cinnamon to the batter. You can also customize the filling by swapping vanilla extract for almond or adding shredded coconut or mini chocolate chips.
