Ingredients
- 4 chicken breasts (boneless and skinless)
- 2 medium zucchinis, sliced
- 1 bell pepper, chopped (any color)
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (or herbs of your choice)
- 1 cup chicken broth or stock
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning. Add to the skillet and cook until browned on both sides (about 5-7 minutes).
- Remove the chicken and set aside. In the same skillet, add onions, bell peppers, and garlic. Sauté until softened (about 3-5 minutes).
- Stir in the sliced zucchini and cook for an additional 3 minutes.
- Pour in the chicken broth, returning the chicken to the skillet. Cover and simmer for 15-20 minutes, until the chicken is cooked through.
- Adjust seasoning with salt and pepper as needed, then serve hot.
Notes
For best results, marinate the chicken in olive oil, lemon juice, and herbs for at least 30 minutes before cooking. Serve with warm crusty bread or a green salad.
