Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes (or any fresh tomatoes)
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 1/3 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 teaspoons garlic, minced
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together balsamic vinegar, olive oil, minced garlic, Italian herbs, salt, and pepper in a bowl.
- Place the chicken breasts in a large bowl and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
- Arrange the marinated chicken in a large oven-safe pan, adding the cherry tomatoes, bell pepper, and onion around it.
- Pour any remaining marinade over the vegetables and chicken.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
- Broil for an additional 2-3 minutes for a crispy top, if desired.
- Allow to rest for a few minutes before serving.
Notes
For enhanced flavor, marinate the chicken for up to 2 hours. This dish can be refrigerated for up to 3 days or frozen for up to 3 months.
