Description

A delightful one-pan dish with tender chicken, vibrant vegetables, and a luscious balsamic glaze, perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes (or any fresh tomatoes)
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1/3 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together balsamic vinegar, olive oil, minced garlic, Italian herbs, salt, and pepper in a bowl.
  3. Place the chicken breasts in a large bowl and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Arrange the marinated chicken in a large oven-safe pan, adding the cherry tomatoes, bell pepper, and onion around it.
  5. Pour any remaining marinade over the vegetables and chicken.
  6. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
  7. Broil for an additional 2-3 minutes for a crispy top, if desired.
  8. Allow to rest for a few minutes before serving.

Notes

For enhanced flavor, marinate the chicken for up to 2 hours. This dish can be refrigerated for up to 3 days or frozen for up to 3 months.
