Description
A mouthwatering dish featuring crispy, tender chicken coated in sweet and tangy barbecue sauce served over fluffy rice.
Ingredients
- 1 lb chicken thighs, boneless and skinless
- 2 cups rice (white or brown)
- 1 cup chicken broth or water
- 1/2 cup honey
- 1/2 cup barbecue sauce
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken with salt and pepper, then add it to the pan. Sear until browned on both sides, about 5 minutes.
- Remove the chicken and set aside. In the same skillet, add the onion and garlic, sautéing until fragrant.
- Stir in the rice, then add the chicken broth (or water) along with the honey and barbecue sauce. Mix well.
- Nestle the chicken back into the rice, cover, and let simmer for about 25 minutes, or until the rice is cooked and has absorbed all the liquid.
- Before serving, fluff the rice and chicken with a fork and garnish with green onions if desired.
Notes
For deeper flavor, marinate chicken in part honey and barbecue sauce ahead of time. Customize with tofu, mushrooms, or different rice varieties.
